From Receiving to Shipping
As soon as they arrive at the factory, Deglet Nour dates undergo a systematic incoming inspection. Each batch is identified by a traceability code that allows us to trace the plot of origin and the harvest date. Our teams verify the physical integrity of the fruit, its sanitary condition, and its moisture content. Only batches that meet our internal specifications are accepted for production.
The dates are then sent to sorting tables, where our operators perform a rigorous manual selection. Any fruit with visible defects, damage, or foreign objects is discarded. This process is followed by a check using optical and metal detectors to eliminate any risk of physical contamination. Each sorting station is supervised by a quality control manager.
Sizing is performed on automated lines that sort the dates according to their size, weight, and shape. This step allows us to create uniform batches for specific uses: whole fruits for retail packaging, medium-sized dates for industrial use, and small dates for processing into paste. Sizing ensures the standardization that is essential for our B2B customers.
For products that need to be pitted, we perform this process manually. The pitted dates are immediately inspected visually.
Our packaging lines offer a variety of formats tailored to our customers’ needs: bulk cartons for industrial use, private-label trays with modified atmosphere packaging, and individual snack pouches. Each unit is provided with complete regulatory labeling. Operations take place in controlled environments with temperature and humidity control. Teams wear full PPE and adhere to strict hygiene protocols (HACCP).
The finished products are immediately transferred to cold storage rooms maintained at temperatures between 0 °C and 5 °C. This temperature-controlled storage slows down any fermentation process and preserves the dates’ organoleptic qualities until they are shipped. Our facilities allow for storage of up to 12 months without any deterioration of the product. Each cold storage room is equipped with continuous monitoring systems that trigger automatic alerts in the event of any deviations.
As a manufacturer and exporter of Deglet Nour dates from Tunisia since 2017, the Yummy’z brand primarily serves a business clientele (supermarkets and large food retailers, food manufacturers, private-label brands, etc.). Yummy’z has production capacity suited to commercial volumes, offering a full range of packaging options (cartons, bags, trays).
